#Spotted: October edition

Introducing, the new #Spotted page on the Tom-Tom where journalists can upload new, seasonal trends that travel around the school. Students can submit pictures using the hashtag #LHSspotted on any social media account to be featured in the latest additions. It will be updated every month; so, keep an eye out for the newest trends seen at Lemont High School.  

 

Five must have treats to make this fall

 

As the leaves begin to fall and the weather starts to chill, we all know what time it is. As the crisp season of autumn comes upon us, so does its seasonal goodies that we can’t help but love.

Here is a list of some quick and yummy seasonal recipes that people are dying to try.

 


  1. Caramel Apple Pops

Everyone loves caramel apples but sometimes the whole apple is just too much. Don’t worry; these caramel apple pops are the perfect treat!

What you’ll need:

  • Granny Smith apples
  • Sucker sticks
  • 1½ cups caramel chews or baking bits (melt)
  • 1 tablespoon heavy cream
  • Your Choice of Toppings (Ex: crushed nuts, crushed cookies, rainbow sprinkles, chocolate candies)

How to make it:

  1. Wash and peel apples
  2. With a melon scooper, scoop out an apple ball
  3. Put the sucker stick halfway into the apple ball
  4. In a small pot, add caramel chews and the heavy cream; melt over low heat, stirring constantly until completely melted
  5. Fill a small bowl with ice water and set it aside
  6. Dry the apple to remove excess moisture from the surface
  7. Dip the apple into the mixture, covering the whole thing and putting a bit on the stick too.
  8. Quickly dip the caramel apple into the ice water for a few seconds to set the caramel
  9. Dry the caramel off gently
  10. Put the toppings on the apple
  11. Place caramel apple into the fridge or freezer to finish setting
  12. Once the caramel is hardened take out and enjoy!

 


2. Reese’s Peanut Butter Cup Muddy Buddies

If you’re a fan of Reese’s Peanut Butter Cups, you’ll die for these muddy buddies. These muddy buddies are full of chocolate and peanut butter that will definitely hit your sweet tooth.

What you’ll need:

  • 12.8 oz box chocolate flavored Chex cereal
  • 1 cup lightly salted peanuts
  • 2 cups powdered sugar
  • 16 oz chocolate melts
  • 1 cup Reese’s peanut butter chips
  • 1 bag Reese’s Minis
  • 1 cup Reese’s Pieces
  • 20 Reese’s Miniatures, cut in halves
  • Any additional peanuts, peanut butter chips or Reese’s

How to make it:

  1. Put the Chex cereal and peanuts in a large bowl and set aside
  2. Separate powdered sugar into two, gallon size Ziploc bags and set aside
  3. Line a baking sheet with parchment paper
  4. Melt both the chocolate melts and peanut butter chips together
  5. Take the melted chocolate and peanut butter and drizzle over the top of the Chex and peanuts, making sure that they are all well coated
  6. Fold in the Reese’s Minis
  7. Divide the chocolate coated mixture equally into the two bags of powdered sugar
  8. Close each bag tightly and gently shake until the mixture is fully coated
  9. Lay out the powdered sugar covered mixture on the parchment paper and let sit
  10. Sprinkle on Reese’s Pieces, Reese’s Miniatures, and additional peanuts, peanut butter chips, and Reese’s Pieces
  11. Store in an airtight container and enjoy!

 


3. Pumpkin Cheesecake Snickerdoodles

Who doesn’t love the cinnamony goodness of a snickerdoodle? But what about with pumpkin and cheesecake? These pumpkin cheesecake snickerdoodles will have you drooling for more!

What you’ll need:

  • 3¾ cups all-purpose flour
  • 1½ tsp. baking powder
  • ½ tsp. salt
  • ½ tsp. ground cinnamon
  • ¼ tsp. ground nutmeg
  • 1 cup unsalted butter, room temperature
  • 1 cup granulated sugar
  • ½ cup brown sugar
  • ¾ cup pumpkin puree
  • 1 large egg
  • 2 tsp. vanilla extract

Filling:

  • 8 ounces cream cheese, softened
  • ¼ cup sugar
  • 2 teaspoons vanilla extract

Cinnamon-sugar coating:

  • ½ cup granulated sugar
  • 1 tsp.ground cinnamon
  • ½ tsp. ground ginger
  • Dash of allspice

How to make:

  1. In a medium bowl, stir together the flour, baking powder, salt, cinnamon, and nutmeg
  2. In a mixer, beat together the butter, brown sugar and granulated sugar on medium and high speed until fluffy for about 2-3 minutes
  3. Blend in pumpkin puree, beat in egg, and then add vanilla on a low speed and slowly add the dry ingredients until well mixed.
  4. Cover and chill dough for an hour
  5. Preheat oven to 350 degrees Fahrenheit and set up baking sheets with parchment paper
  6. Scoop a tablespoon of the cookie batter and flatten down
  7. Place a teaspoon of the cream cheese filling in the center of it
  8. Scoop another tablespoon of cookie batter, flatten, and place on top of the cream cheese filling
  9. Pinch the edges together and then roll into a ball
  10. Roll in the cinnamon sugar.
  11. Place on cookie sheet 2 inches apart from each other
  12. Repeat steps 5-10 until finished with cookie batter and flatten the cookie balls down
  13. Bake for 10-15 minutes
  14. Cool on baking sheet and enjoy once completely cool

Cream Cheese Filling

  1. Blend cream cheese, sugar, and vanilla together. Chill for an hour

Cinnamon Coating

  1. In a small bowl, combine the sugar and spices for the coating and set aside

 


4. Apple Cider Floats

Even though fall is the time for being warm and cozy, ice cream never goes out of season. Adding a little bit of ice cream to your apple cider, and you got a sweet drink that everyone will want!

What You’ll Need:

  • 2 cups apple cider
  • 1 cinnamon stick
  • 1 cup vanilla ice cream
  • 1 tablespoon caramel sauce
  • Grated nutmeg

How to make:

  1. In a small saucepan, heat cider with the cinnamon stick
  2. Pour cider into float glasses
  3. Add vanilla ice cream, caramel sauce and nutmeg
  4. Serve

 


5. Harvest Caramel Corn

One of the best treats of fall has to be the endless amounts of caramel popcorn. This homemade caramel popcorn sprinkled with festive candies like M&M’s and Rolos will have you eating till it’s gone!

What you’ll need

  • 10 cups of popcorn
  • salt
  • 1 cup butter optional flavor: sweet cream salted
  • 1 cup brown sugar
  • 2 tsp. vanilla
  • 1/2 tsp. baking soda
  • 1 bag of mini Rolo’s
  • 1 bag harvest blend M&M’S candy

How to make:

  1. Pop all the popcorn till you have approximately 10 cups and salt the popcorn lightly
  2. Melt 1 cup of butter in a medium saucepan over medium heat
  3. Add 1 cup of brown sugar and mix
  4. Bring the mixture to a boil stirring continuously and cook for 5 minutes and add vanilla at 4 minutes
  5. After boiling, add baking soda. The caramel should change colors and foam a bit
  6. Drizzle ¾ of the caramel mixture over the popcorn and gently fold the popcorn till all coated
  7. Put the popcorn on a cookie sheet with parchment paper
  8. Drizzle the remaining caramel over the popcorn and then add the Rolos and M&M’s
  9. Let the popcorn cool and enjoy

You can’t go wrong with any of these delicious fall treats; so, dig in and enjoy this autumn season!
